Got a ripe avocado or two and not sure what to do with them?
Make this super-quick, super-healthy instant chocolate mousse! A study in Diabetes Care found that a diet rich in monounsaturated fat – which avocados are packed with – may prevent body fat distribution around the tummy. Other studies confirm that including avocados in your lunch meals can lead to greater satiety, preventing over-indulgence at dinner time.
Instant Avo Chocolate Mousse
Ingredients
– 150g good-quality
dark chocolate
– 11⁄2 to 2 ripe avocados
– 1⁄3 to 1⁄2 cup almond milk
– 1 to 2 tbsp honey
– 1⁄4 cup berries, to serve
Method
1/ Gently melt chocolate
in a double boiler.
2/ Place avocado, milk and melted chocolate in a food processor and blend together until smooth. Keep adding a little more almond milk until the mousse is smooth and light. Blend in honey to taste.
3/ Spoon into six glasses or bowls and serve immediately. Garnish with extra berries.
