If you’d asked me a few weeks ago, I would have said that there is nothing better than a spicy, herby, garlicky tomato pasta sauce. It’s a staple in my house and is made at least once a week. Quick, easy and super delicious.
However, I was recently looking for something a bit different from my pasta. Something creamy and unctuous. But still really easy to make with no crazy ingredients that might be hard to find during lockdown. Enter butternut pasta sauce. It’s still spicy, herby and garlicky, but it’s earthy and creamy and so, so satisfying.
What’s really great is that it’s also super versatile, so you can flavour it as your taste buds prefer and you can add whatever toppings you want. Basil pesto balances the sweetness of the butternut perfectly, while toasted almonds add an appealing crunch. Sun-dried tomatoes will add a lovely pop of flavour and fried sage leaves will take you right back to your favourite risotto.
