In my opinion, there’s nothing more comforting than a saucy curry when the weather is slightly miserable. But, to be honest, I find it comforting when the weather is hot as well. This version is a chickpea “butter chicken” vegan curry, but it’s rich enough to satisfy any militant meat-eater. Easy to make in bulk, it’s also perfect for Sunday meal prep.
