What You Need

400g beef fillet
1 tbsp olive oil
2 tbsp Nomu coffee rub
For the chocolate-chilli sauce
125ml fresh beef stock
65ml red wine
1 small red chilli, finely chopped
70g good quality dark chocolate
40ml reduced-fat cream
15ml rosemary, roughly chopped

Method

1/ Salt and pepper to season To make the chocolate-chilli sauce, place the beef stock, red wine and chilli in a saucepan and allow to simmer until reduced by half.
2/Whisk in the chocolate and continue stirring until the chocolate is melted and the sauce is thickened. Add the cream and chopped rosemary. Season to taste. Place the fillet on a board and rub with olive oil.
3/ Press the coffee rub all over the outside of the steak. Sear in a hot griddle pan, turning frequently, for two to three minutes or until cooked to your taste.
4/Serve immediately with the chocolate-chilli sauce.
