Need a boost? Try this low-carb, sugar-free treat that you can indulge in – guilt-free.

You could try superfood powders or just get more sleep, but sometimes you’re low on both. So… try this quick snack on for size:

What You Need

2 tbsp butter
3 tbsp xylitol
4 tbsp cream cheese
1 cup almond flour
½ cup finely desiccated coconut, plus 4 tbsp extra for dusting
1 tsp vanilla essence

Method

1/ Melt the butter, xylitol and cream cheese together in a saucepan on medium heat.
2/ Allow to simmer for two minutes to form a caramel-like sauce. Add the almond flour and coconut and stir until it forms a ball. Add the vanilla. Remove from heat and place in a clean container or on a cutting board. Roll into large grape-size balls (makes about 16).
3/ Roll the balls in the extra coconut until completely covered.

Serves 16. Per serving (20g): 334kJ, 7g fat (3g sat), 4g carbs, 15mg sodium, 1g fibre, 2g protein
