Most days, all I want for supper is somethings fresh, tasty and with a carb or three. And a simple salad is just not going to cut it. I know, this bounty bowl looks quite a bit like a salad, but it’s the hearty big brother to a fresh green salad, with sweet potato, broccoli, mushrooms, spinach and a good dollop of hummus to round it all off.

To serve, it’s always aesthetically pleasing to arrange everything neatly in the bowl, but, to be honest, to really enjoy it, you’ll need to cut everything up to make sure you get a bite of everything with each forkful. This recipe is really versatile, so you can add or sub any ingredients that catch your fancy. I’m always ready to throw in some spicy, crunchy chickpeas.

What’s also really great is that you can use any leftovers to make a big salad for lunch the next day – just add your favourite ingredients (e.g. fresh tomato, cooked brown rice, cucumber, chickpeas) and mix together with the leftovers.
