Guilt-Free Chocolate Biscuits

Craving chocolate biscuits, but don’t want to binge out on the shop-bought variety? Here you can have your, er… biscuits and eat them too – thanks to this nutrient-packed recipe. And, they only take 20 minutes to make!
The black-eyed beans together with the whole-rolled oats will give you a serious boost of fibre, leaving you feeling satisfied and energised.
What You Need
Makes 10 to 12 large cookies
2 cups Pouyoukas dried black-eyed beans
2 tbsp coconut oil
2 heaped tbsps raw cacao
½ cup pure maple syrup (you can substitute this with ½ cup agave syrup)
1½ cups whole-rolled oats
Handful of cacao nibs or dark-chocolate chips (Lindt 70% and above does not contain diary)
Method
1/ Pre-heat oven to 180 degrees Celcius.
2/ Prepare the black-eyed beans as per packet instructions. Place prepared beans in a blender with coconut oil, cacao and maple syrup and blend until smooth. Transfer the mixture into a bowl and stir in the whole-rolled oats and cacao nibs.
3/ Spray a baking tray with non-stick spray. Scoop the mixture out of the bowl, moulding each spoon into a ball. Push onto the tray to form thin circles. Bake for 20 minutes and allow to cool before eating.
