The beta-carotene in the butternut converts to vitamin A in our bodies, which helps boost our immune system and it’s great for our skin.
You can think of this soup as a complete meal with all the macro-nutrients: carbs from the potatoes and butternut, protein from the lentils and fat from the coconut cream. Plus the fibre from the butternut and lentils will help you feel fuller for longer. Great for weight loss!
The curry and harissa spice will also help boost your immune system and adds a flavour punch. Yum… Now that’s a soup we can eat all week.
This recipe is vegan, but you can replace the coconut cream with a splash of milk, cream or yoghurt. Adding yoghurt will mean extra good bacteria for the gut. #Guthealth
