Avos may be out of season, but we’ve got the toast toppings to get you through summer

As the weather gets warmer and warmer, our favourite spreadable fresh produce — avocado, in case you aren’t aware of the obsessive relationship WH has with this creamy, versatile fruit — is slowly beginning to fade away. And even when you can find them on the shelves, either their quality is highly suspect or you need to take out a Wonga loan just to afford one, single fruit.

But what will we put on our toast? Is there anything that even comes close to comparing to the mighty avo when it comes to toast toppings? Why yes. Yes, there is. Below are listed five delicious substitutes that will get you through the long summer months, all the way to winter when once again we will be blessed with an abundance of cheap, A-grade avos. You can thank us later.

Hummus, Fried Mushrooms And Herb Toast

Ingredients:

— 1 punnet mushrooms, chopped
— Olive oil
— 1 clove garlic, minced
— A pinch origanum
— A pinch thyme
— Salt and freshly ground black pepper
— Hummus

Method:

1/ Fry the mushrooms in a small splash of olive oil until just before they start to colour. Add the garlic and fry until the mushrooms begin to brown. Sprinkle with the herbs, season and stir to combine. Remove from the heat.
2/ Spread a layer of hummus onto your toast.
3/ Top with the fried mushrooms and an extra sprinkle of herbs.

Pesto And Tomato Toast

Ingredients:

— For the pesto:
— 1 bunch basil
— 100g cashews
— 1/4 cup olive oil, plus extra
— Juice of one lemon
— Salt and freshly ground black pepper
— 1 large tomato, cut into thick slices

Method:

1/ To make the pesto, place all the ingredients in a food processor and blend until smooth, but still with a bit of texture. Taste and adjust the flavours as necessary (add more lemon, olive oil or seasoning as you prefer).
2/ Heat a splash of olive oil in a pan and gently fry the tomato slices – be careful not to overcook them, no one likes mushy tomato! Season them as they cook. Remove from heat.
3/ Spread the pesto onto the slice of toast and add the tomato slices. Season and serve.

Different toast recipes

Hummus, Sun-Dried Tomatoes, Grilled Artichokes And Peppers Toast

Ingredients:

— 1 pepper, thinly sliced
— Olive oil
— 1 garlic clove, crushed
— Hummus
— Sun-dried tomatoes, chopped
— Roasted artichokes, roughly chopped
— Fresh basil leaves

Method:

1/ Fry the peppers in a splash of olive oil. Just before they begin to brown, add the garlic. Fry until caramelised, then remove from the heat.
2/ Spread your toast with the hummus, then layer it with sun-dried tomatoes, artichokes and the fried pepper slices.
3/ Season and garnish with fresh basil leaves.

Chocolate-Almond Nut Butter And Raspberries Toast

Ingredients:

— Chocolate-almond nut butter
— Fresh raspberries

Method:

1/ Spread your toast (why not treat yourself with a loaf of brioche?) with chocolate-almond nut butter and top with as many raspberries as the slice can hold.
2/ Try not to replace all meals with this one

Nut Butter And Banana Toast

Ingredients:

— Your favourite nut butter
— 1 banana, sliced

Method:

1/ Spread your toast with nut butter and top with sliced banana
