We’re mad about avocados! Not only are they heart healthy, they are good for your skin and help with weight loss by keeping you fuller for way longer than a regular cheese sandwich.

Here’s a quick and easy avocado lunch-time recipe suggestion, because life’s too short not to really make your lunch count. You could also use this as the perfect post-workout refuelling snack. It’ll give you the energy boost you need to get through the rest of the workday without hitting that 3pm slump.

Preparation time: 10 minutes
Serves: 4 as a light lunch

What You Need

2 avocados, halved and pitted
170g crab meat, drained
100g mango slices, chopped
2 tbsp diced sweet piquanté peppers

Stuffed Avo Method

Loosen crab meat with a fork and mix gently together with mango and diced sweet piquanté peppers. Cut the avocados in half and remove the stone. Spoon out half the avocado flesh, chop and add to the crab meat mixture. Spoon the crab meat mixture into the avocado shells and eat immediately.
