Who needs the carbs anyway?

You probably already know the power of protein, right? And the power of a good breakfast to both fill you up and slim you down. Never mind ensuring you crush your workout.

So why not try something different this morning? How about some eggs on garlicky greens… They are delicious. Trust.

What You Need

2 tbsp olive oil, divided
2 large bunches mixed greens (such as kale, Swiss chard and spinach), stemmed, leaves shredded
4 garlic cloves, thinly sliced
½ cup rosa tomatoes, halved
4 large eggs

Method

1/ Heat one tablespoon of oil in a non-stick pan over medium heat. Add the greens and cook, stirring frequently, until they begin to wilt (about 10 minutes).
2/ Add the garlic and tomatoes and continue to cook until the garlic begins to brown (about five minutes). Divide the greens among four plates. Wipe out the pan.
3/ Return the pan to a medium heat, add the remaining oil and crack the eggs into the pan. Add one tablespoon of water and cover the pan with a lid for about three minutes. Remove the lid and continue cooking until the whites are set but the yolks are still runny (about one minute). Top each plate with an egg.
