Blueberry muffin
In a ramekin, whisk 2tbs coconut flour, a splash of milk and 1 egg into a smooth batter (add extra milk if needed). Stir in half a cup blueberries and microwave on high for 2 mins.

Overnight oats
In a small bowl, mash a ripe banana then mix in ⅓ cup rolled oats, half a cup almond milk, 100g plain yoghurt, 1 tbs each tahini (or nut butter) and chia seeds, plus a sprinkle of cinnamon. Cover and leave in the fridge overnight, ready for morning.
Microwave oats
You don’t need a stovetop to cook oats. Simply pour boiling water over the oats until they’re all covered, then microwave on high for one minute. Add milk and toppings, like a chopped banana, peanut butter and nuts.

Super-quick omelette
Crack 2 eggs into a large mug and beat well. Add half a cup chopped cherry tomatoes, a handful chopped spinach, 1 chopped spring onion and 1 tbs grated cheese. Microwave on high for 2 mins and you’re good to go.
