For the green curry paste:
- 1½ tbsp fresh ginger
- 3 lemongrass stalks, outer layer removed, chopped
- 3 to 4 large cloves of garlic, chopped
- 10 to 12 green chillies
- 1 tsp salt
- Large handful of basil leaves
- 2 tbsp coconut oil
