We all know about the hot, spicy, nutritional benefits of Thai food, but sometimes the delicious package comes with grease. So, in the spirit of #MeatFreeMonday, try this healthy vegan take on a traditional green curry. It’s just one of the tasty, nutritious meals from our 28-Day healthy meal programme.

For the green curry paste:

  • 1½ tbsp fresh ginger
  • 3 lemongrass stalks, outer layer removed, chopped
  • 3 to 4 large cloves of garlic, chopped
  • 10 to 12 green chillies
  • 1 tsp salt
  • Large handful of basil leaves
  • 2 tbsp coconut oil
