You know that moment when you open your fridge and you’ve got some random baby marrows and maybe one aubergine? Well this recipe is a celebration of vegetables and you can adapt it to use up most vegetables that grill nicely on the braai (think mushrooms or asparagus).

“For best results, grill slices over hot coals until dark and smoky, then cut into smaller chunks and toss in a zippy dressing of olive oil, lemon juice, fresh garlic and mint. Serve with chunks of soft, fresh mozzarella balls and some fresh rocket,” says Ilse.
