The Association for Dietetics in South Africa (ADSA) has launched a campaign in partnership with rising-star chef Vanessa Marx (head chef of Dear Me and The White Room in Cape Town). Together they’ve created a collection of recipes under the brand NutritionConfidence, that are as delicious as they are healthy! Looking for some baking inspiration? Try this wheat-free, dairy-free, sugar-free almond and orange torte. Best thing? It’s great for diabetics too.
“Xylitol is a naturally occurring alcohol found in most fruits and veg. It’s a low-kilojoule alternative to sugar with a low glycaemic index, resulting in a slow rise and fall in blood sugar levels. Almond flour is a nutritious flour substitute due to its high monounsaturated fat and moderate protein content. Plus, almonds are rich in vitamin E, B2, calcium, fibre and magnesium. Eggs are a great source of high-quality protein and the yolk is a source of vitamin A, B, D, iron and zinc,” says dietitian and ADSA spokesperson, Maryke Gallagher.

Makes 1 whole torte (10 slices)
Mix it up: The orange zest can be substituted with lemon or other citrus zest like grapefruit or lime. You can also add a teaspoon of ground cinnamon, some almond essence or a handful of poppy seeds.
